Beetroot Bean Salad

A popular salad in Latvia and Lithuania (Pupiņu un Biešu Salāti and Raudona mišrainė, respectively), which can also be found on our store shelves from time to time. If you prefer to cook the beans yourself, you will need about 5 dl of boiled beans.PreparationRinse and drain the boiled/canned beans. Cut the boiled beets into 1-1.5 cm cubes or coarsely grate them. Chop pickled cucumber. Mix sour cream and mayonnaise in a large bowl. Add the beans, cucumber and beetroot and gently toss the salad. Season with salt and pepper. Transfer the salad to a serving bowl, garnish with parsley or chives and serve.
